indicated in this case as providing a support for sausages 19, although it will be readily understood that the cage may be of any form suitable to the carrying of other articles or substances which it may be desired to introduce into the apparatus. The said cage is adapted by reason of the carriage to be passed through the said compartment 3 from end to end, its entrance and egress being permitted by the opening of the doors 4 and 5 as required, these doors being maintained closed, however, while the cage is passing through the said compartment in order to prevent unnecessary escape of smoke or fumes therefrom. To effect the movement of the cage through the said com partment, the chain 5 is provided with a plurality of hooks 20, either of which may be engaged with the carriage 14: to transmit motion thereto, and the number of cages which may be so moved at one time will be dependent upon the size of the apparatus and the number and relative spacing of the hooks on the said chain in a device con; structed in this particular manner.
The success of the treatment of the articles or substances so passed through the smoke chamber depends to a very great extent upon the duration of the treatment, character of the smoke and the manner in which they are subjected to the smoke in the said smoke chamber, the first two of which conditions may be governed by the speed of travel of the cage through the smoke chamber and by the nature of the fire producing the smoke, and the last mentioned condition we obtain by the provision of means for the introducing into the chamber in stages throughout the length thereof of smoke of various intensities whereby the articles or substances carried by the said cage are successively subjected to smoke within the smoke chamber of such various intensities.
In the curing of sausages, for example, it has been found that superior results can be obtained by first mildly smoking them and then progressively increasing the intensity and heat of the smoke as the curing action takes place; and in the device illustrated this effect is simply and efliciently secured by the provision beneath the smoke chamber of upwardly opening fire boxes 21, 22 and 23 intended to house fires of a nature giving progressively increasing intensities of smoke. which is admitted through gratings 2a to the said smoke chamber 3. whereby the smoke in the said chamber is substantially more intense near the egress end thereof, as also is the temperature where a hotter fire is provided in the fire box 23 than in the fire box 21, 25 being smoke stacks for the eventual escape of the smoke from the smoke chamber 3.
These smoke stacks may beso spaced and arranged that they tend by the draft created thereby to prevent the intermingling of the smoke from the several fire boxes and thereby maintain the varied smoke atmosphere desired in the chamber.
Fire doors 26 may be provided accessible from the firing floor 2 to facilitate the building and cleaning out of fires in the said fire boxes.
The apparatus described is more particularly intended for the smoking of sausages, although it may be used for the smoking of any other article or substance in which it is desirable that variation in the intensity of the treatment throughout the operation be obtained, and the precise form of the construction and its operating parts may be varied to suit the capacity required or particular characteristics of the articles or substances to be treated as will be readily understood; and the nature of fire or fuel producing means will be also dependent upon the particular result sought for or the form of fuel available or desirable.
This invention may be developed within the scope of the following claims without departing from the essential features of the said invention, and it is desired that the specification and drawing be read as merely illustrative and not in a limiting sense, except as necessitated by the prior art.
What we claim is z- 1. Smoke house apparatus comprising, an elongated smoke chamber, a conveyor travelling the length thereof, and fire boxes arranged beneath said smoke chamber, said boxes being adapted to admit smoke to said chamber in stages throughout its length whereby smoke of varied densities may be provided in said chamber.
2. Apparatus according to claim 1, wherein travelling means are provided for the supporting of articles in said smoke chamber, rails for the guidance of said means, and entrance and egress doors at oppositeends of said smoke chamber.
3. Apparatus according to claim 1, wherein the fire boxes are arranged in a series beneath said smoke chamber, whereby a progressively varied intensity of smoke is admitted thereto throughout the length thereof.
4. Apparatus according to claim 1 of twostory construction, the smoke chamber occupying a floor and the fire boxes being arranged upon a floor therebeneath from which access to said fire boxes is gained.
5. In a device of the class described, an elongated smoke chamber, conveying means extending the length thereof, said smoke chamber having a series of openings in the base thereof in the direction of its length, and a separate fire box beneath each of said openings.
