TO ALL WHOM IT MAY OONCERN:
. Be it known that I, DARIUS BEARDSLEY, of the village of Ithaca, in the county of Tompkins, and State of New York, have invented a new and useful Method of Exhausting Air from Fruit Cans and Jars bythe usefof Steam; and do hereby declare that the following is a full andexactdescription of the same, and ofthe construction of the necessary implements used in my method, reference being l1ad.to the accompanying drawings and the letters of reference marked thereon.- i
The nature of my invention consists in 'the construction of an apparatus for tbegeneration and condensing of steam', and attaching it to top of fruit-can or jar in such manner that the condensing ofthe steam will exhaust the air from the fruit-can or jar. i

I construct a cup or pot, E, of any desiredform or size, with a double convex chamber, secured to the mouth and extending into the vessel E, as shown in the drawings, and open at the lower end, as shown by the lines G G. This cup or pot E-I surrouudwith an outer cup p1' pot, C C, open at tbe lower end, for the purpose of forming a chamber for filling with cold water, as shown by 0 O, hg. 2. I also provide the potcr cup E with an escape pipe, P, and faucet F, as shown in g. 1, for the purpose of the escape of the air while 'generating steam, and to show when the steam-chamber is full of steam, which is Adone by leaving the faucet F open. I also provide the pot or steam-chamber E with a cover, as shown by the continuation of the lines G, the cover being provided with mouth, as shown by the lines'S S, to be stopped with thecork A, while generating .the steam, and to fit the projection It R, hg. 2, the joint being made air-tight bythe use of a rubber ring, I I, tig. 2. When suicient steam has been generated, (as shown by fig. 1,) to fill the steam-chamberE, the faucet F is then closed and the apparatus is then placed in an inverted -position over the fruit-can cover (which isprovided with a suitable receiver or projection, R R, to meet it as afore-describei') and the chamber C C filled with Coldwater O O for the purpose of condensing the steam in the steam-chamber E, and, by theV condensing of the steam, exhausting the air from the fruit-can orjar, as shown by Ig. 2; the cover K to the fruit-can being perforated and provided with arubber valve, L, which is held to its place bythe pressure of -air after' the can or jar has been exhausted of air by the Iabove-described process. I also provide my steam apparatus with a haudlefM, attached by strips N N.
Having described the construction and'operation ofmy steam apparatus suiciently lto enable others skilled in the artto construct and operate the. same, I will proceed to state what I claim and desire to secure by Letters Patent of the United' States,
1. The herein-described method of exhausting .air from Afruit-cans or jars by thecondensing of stez'tin.v
2. I claim the double convex chamber, extending into the `st'eani-chamber E, for the purposes specified.
