I agree with Axier favorite tasting figs will vary from person to person as we all have different taste buds some like it very .... Violette De Bordeaux is a MUST HAVE fig as it tastes so good and does well in most Climates.

Anyone who does real commercial sales will tell you that you must have want people want or you won't ... If I had to choose, I would rather have a good tasting, consistent producer than the best tasting fig which did poorly  ...

I don't know the answer to your main question (the must have figs for the South) but I can't wait to hear the answers from ... As far as I know though, you certainly have two good choices already, the Alma and Celeste.
